I had 3 bananas that were almost to the point of no return.

It was use them or throw them away. So I looked for a recipe for Banana nut bread. Then I saw I had few of the ingredients, so decide to improvise. I mashed the bananas, beat a couple of eggs, added about 1/2 cup of cooking oil, then discovered I had about 3/4 cup of flour, but saw an almost empty box of pancake mix. I honestly figured I was going to end up throwing it all out so dumped the pancake mix (little over 1 cup)in with the flour. Added a pinch of baking soda, wasn't sure that would make it rise enough, but I hate the taste of too much baking soda, so added a couple pinches of baking powder and a tsp. of salt and a couple of tsps of cinnamon. I also had a small amount of walnuts, so added those. I don't know why, but I did not think about adding any sugar or even Splenda. The batter was thick, so I added just a little milk...maybe 1/2 cup. It was enough batter to fill my 12 cup muffin pan twice, and made nice size muffins. I had to taste one, because I figured they would not be good and I would throw them out for the birds, but I was surprised, with a little butter, that they were very tasty. Then I had to taste another to make sure they were good.

Grandkid and her friend and Daughter loved them, Hubby liked them, but added a spoonful of strawberry preserves to his 4! So far, my BS is doing OK with the 2 I had. Most of them are gone already, so I should not be tempted to have more. Just a little pleased with how my experiment turned out.
