Chicken Salad

Got an e-mail today with this recipe, thought i'd share.

16 oz boneless skinless chicken breasts , cooked (cut into strips)
4 medium celery stalks , sliced
2 tbsp slivered almonds
4 tbsp mayonnaise
2 tsp dried dill weed
salt and pepper (to taste)

I like to add a little curry powder when making chicken salad, as i'm not a big mayo fan. Gonna try this one this weekend.

Metformin 500 mg twice daily
HCTZ 12.5 mg every other day for BP
Enalapril 20 mg 1 daily (ace-inhibitor)
Lower carb dieter (approx. 75 total carbs/day, more on weekends), taking chromium, multivitamin and fish oil tablets


Initial A1C 8/06: 9.6
11/06: 6.2.
03/07: 5.3
06/07: 5.4
10/07: 5.3
05/08: 6.2 (after dealing with shingles & bronchiti)
2/09: 5.5

My family love chicken salad. I make it about the same except I use Miracle Whip (also don't care for mayonaise), I add grapes cut in half and usually chopped walnuts, but I like it with almonds too. Can't stand the taste of dill, but the curry powder sounds good. Pat likes his chicken salad with sweet pickles and hard cooked eggs and a little yellow mustard. Sometimes, I chop up the chicken and make chicken salad 4 different ways, so everyone gets it the way they like it.

I LOVE chicken salad and always make my own. I'm not big on celery, so I only add one stalk, chopped in small pieces.

If you like Craisins & Walnuts........add about a 1/2 cup of each. The Craisins will add to the carb count a bit, but it's well worth it!

I think the craisins would make a great addition! I used to love adding white grapes, but can't tolerate them anymore blood sugar wise.

I use Greek-style yogurt (instead of yogurt), apples (instead of grapes) and add lemon juice.

I love how the curry (sometimes I use turmeric and/or cumin in place of or together with the curry) makes the salad a stand-out.

I sometimes also add Pommery Meaux Mustard or Dijon mustard.

Sounds great! Could you whip this up for me and fax it to me? Yah right, I wish there was a meal fax machine. Maybe some day in the future.

How do you cook the chicken? I ask because my grandmother always uses leftover fried chicken and I always liked that more than making it with baked chicken..

I guess I'm just really southern though. Also, it was probably just psychological. :P I'm sure I couldn't tell the difference by taste. haha.

Sometimes, i just pan fry lightly with very little oil. I have even cooked it in microwave, i have to be careful not to overcook.

I like to boil/poach it in a little chicken broth.

I like to roast up a big pan of boneless skinless chicken cutlets with a very simple basic seasoning, salt, pepper, granulated garlic and onion, and then use them for assorted dishes like chicken salad or to toss with pasta and arrugula or baby spinach for a quick dinner. They also store well in the freezer and are great to have on hand. The chicken salad sounds very nice. I would just add chopped chives to it.
