Smile Looking for Chicken N Dumplings recipe...

I love love LOVE chicken n dumplings...i made it the way my grandma did, real simple with biscuits and chicken broth, chicken and etc however after being dx'd with T2 last week, I don't know if I can still make it the same way...any of yall have any recipes for this yummy meal that wont make BG spike?

I haven't tried it yet, but I have read that you can make good, lo carb biscuits and pancakes with almond meal. A really nice, creamy gravy can be make with heavy cream as a thickener.

I like chicken and dumplings too. I hope someone posts a good recipe.

I gotta say, I LOVED bisquik dumplings and chicken pre-veg (in my earliest teens!).

I am trying to imagine though, by the time I substitute for the chicken ... AND the dumplings??? What resemblance would it bear?

But ... I was making a really good spicy African stew with Bisquik dumplings (instead of using fake chicken), so this fall I jsut may have to rise to the challenge on this one!

Jul ... C-pep 1.3, GAD-65 > 30

metformin 1000 mg BID
Simvastatin 80 mg
Ramipril 5 mg
T4 125 mcg
baby aspirin
Vitamin D3, 2000 IU (blood values normal, advised to continue this dose by endo)
CoQ10 100 mg
Eating 70 - 90 g carb per day
Interval training on recumbent cycle
BMI is down to ca. 25.8



According to Joslin's Diabetes, 2005 ed., 5 - 30% of those diagnosed as Type 2 actually have LADA.

Might have found a key ingredient ... I made a muffin-in-a-minute the other night, but used 2 T of flaxmeal, and two of rice protein powder, had to add some water to get to mix into a batter ... and it came out Biscuit-y! So ... need to keep it in mind for experimenting with a dumpling texture.

It's a start.
