Pumpkin seeds!

1 tsp or more EV olive oil

2 cloves garlic

1/2 lb pumpkin seeds, the green, peeled kind known as pepitas.

cayenne or other dried ground red pepper and salt, to taste

1 TBS lemon juice

saute garlic in olive oil, add red pepper, pumpkin seeds salt and roast until brown.

I use extra red pepper so it will slow my progress -- they are yummy and ADDICTIVE! Oh and they are a great dietary source of magnesium too.

Simvastatin 80 mg
Ramipril 5 mg
T4 125 mcg
baby aspirin
Vitamin D3, 2000 IU (blood values normal, advised to continue this dose by endo)
CoQ10 100 mg
Eating 70 - 90 g carb per day
Interval training on recumbent cycle
BMI is down to ca. 25.8



According to Joslin's Diabetes, 2005 ed., 5 - 30% of those diagnosed as Type 2 actually have LADA.

I love pumpkin seeds, shell & all, and I used to roast 'em when we grew pumpkins. Is this calling for 1/2 lb. of shelled or unshelled seeds?

The shelled green kind. Yes you do go thru them faster than ones with the shells on ... but I eat them like nuts -- in weighted portions!

Gotcha. Maybe I can sneak these into DH's meals occasionally too . . . he turns up his nose at the generic green ones . . .

They'd be good on salads, but I eat them straight up!
