Quick Cheese & Bacon Loaf

... A warm slice of this with a home made vegetable soup is great. Enjoy!

QUICK CHEESE & BACON LOAF

Cuts into 10 slices approx.

Per slice:
166 calories
9 g fat
7 g protein
15 g carbs

Ingredients:
4 oz (100 g) lean back bacon rashers (you can also use turkey rashers, and even less fat!)
4 oz (100 g) plain flour
4 oz (100 g) plain wholemeal flour
1 tsp (5 ml) bicarbonate of soda
1/2 tsp (2.5 ml) cream of tartar
1/2 tsp (2.5 ml) dried mustard powder
2 oz (50 g) sort margarine
4 oz (100 g) mature cheddar, grated
5 spring onions, finely chopped
1 egg, beaten
1/4 pt (1/2 cup - 150 ml) semi-skimmed milk

Grill the bacon until crisp. Drain on kitchen paper and cut into small pieces. Sift the flours, bicarbonate of soda, cream of tartar, and mustard powder into a bowl. Tip any bran remaining in the sieve back into the bowl. Rub in the margarine until the mixture resembles breadcrumbs. Stir in the bacon, 3 oz (75 g) of the cheese and the spring onions. Beat the egg and milk together and stir into the flour mixture. Mix well. Transfer to a lightly greased 2 lb (900 g) loaf tin and smooth the top. Sprinkle the remaining cheese over. Bake in a preheated oven at 200°C (400°F) for 35-40 minutes or until a skewer when inserted comes out clean. Allow to cool in the tin for 5 minutes, before turning out on to a wire rack. Serve in slices, warm preferably. Best if any leftovers are kept in the fridge.
