Salmon Puffs

This recipe is usually made with flour which I avoid now, but it is an old fave. I replaced the flour with flax seed meal and tried it today. The puffs came out pretty good.(recipe says you can use tuna but I haven't tried that)

Salmon Puffs

1 can (14 oz) salmon or tuna
seasoning--I used only pepper
1 egg
1/4 cup flour--I used a scant 1/4 cup flax seed meal
1 heaping teaspoon baking powder

Drain the salmon well and reserve 1/4 cup liquid in a small bowl.

Put the salmon in a mixing bowl and break up with a fork. Mash in the egg and flax seed meal with the fish and mix up well.

Add the baking powder to the reserved liquid and beat with fork until fluffy. Add to the fish mix and blend well.

Use 2 teaspoons to carefully drop small balls into deep fryer with hot oil (I used Canola). When brown on one side carefully flip and fry on the other until golden brown. Remove from deep fryer and drain well on paper towels.

These are best when first fried and hot from the fryer.

I had these with a (very) few sweet potato fries and a salad for lunch.

That sounds really good. Where do you guys get your flax seed meal?

I like them. And they are really easy with just a few ingredients that I always have on hand. I buy the flaxseed meal at the bulk food store. It is a great place for people with D to shop. Smells good too. They also have many different kinds of nuts in all forms--from almond flour to pecan halves very fresh and good prices too. Other really good stuff is available too like unsweetened almond milk. The other great thing is if you are not sure you can just scoop a little bit of flax meal to try and you don't have to buy a whole bag.

I had the leftover puffs for breakfast today but not everyone loves salmon as much as I do.

Good luck with the recipe. Hope it turns out for you. I clipped it from the newspaper in the 1970s sometime and its always a hit with my family.
