| | | evil green-chili quichelike stuff ... I do not remember the author of this recipe, but it showed up in 500 (more!) low-carb recipes by Dana Carpender. Easy and RICH.
3 fresh chilis (NM Hatch type, your choice of heat!)
8 oz salsa (GOOD stuff, again your choice; watch carbs)
8 oz shredded sharp cheddar
8 oz shredded jack
5 eggs beaten with 1 cup of cream
Preheat oven to 350.
Hard part: Fire-roast, peel and chop the chilis about 1/2 to 3/4".
Easy part: into a 9 x 13 pan, layer:
Chilis, cheddar, salsa, jack, chilis.
Pour egg and cream mixture over all and bake 1 hr at 350 or until done.

I have the last homegrown jalapenos & cayennes of the season in my kitchen right now. I do not have the typical green chiles, but I can sub these.
This sounds like it would be great for breakfast, brunch, or any time of day, including a late night supper.

OH BTW it also cautions THIN layers work best, so do not try to do it in a smaller pan!

Mich | Yes, that is what the book called it, too, come to think of it! Chilis rellenos are so different I have trouble thinking of it like that though!

There's another one too, that has a coupla spoonfuls of flour added to thicken it a little, so it can be cut in squares like candy . . . it's called Mexican Fudge

AND one made with cottage cheese and jack, instead of the cheddare and jack. Enough variations, for everyone!

| | | This just came outta the oven & it's stupendous! I checked my old relleno casserole recipe to find that it called for 1/2 cup flour & only two eggs, so this one is definitely the low carb winner.
Didn't have jack cheese, but mozzarella worked fine. Used half green chiles & half jalapeños . . . it's just nice & warm for me, but might be pushing the "hot" envelope for DH.
I think I'll bake a big batch of this when we get to my dad's for Thanksgiving weekend. What an easy recipe for a big crowd.
