Thumbs up Yellow Split Pea & Turkey Pasta Sauce

... Tried this recipe yesterday and will have to make it every week now. Everyone loved it. I especially like it because it's so low in fat. Use dried tomato purée if you can get your hands on it. Delicious!

The only thing : you must remember to soak the yellow peas overnight.

YELLOW SPLIT PEA AND TURKEY PASTA SAUCE -
Serves 4

Per serving:
Calories 161
Fat 2g
Protein 20
Carbs 19

Ingredients:

4 oz (100g) split yellow peas
8 oz (225g) lean minced turkey
1 large onion, finely chopped (I added courgettes, peppers, mushrooms)
1 clove garlic, crushed
1/4 pint (425ml - 1/2 cup) chicken or vegetable stock
1 can (14oz - 400g) chopped tomatoes
2 tbsp (30 ml) tomato purée
salt and freshly ground black pepper to taste

Soak the split peas overnight in plenty of cold water. Rinse thoroughly and place in a sauce pan with fresh water. Bring to the boil; boil rapidly for 10 minutes. Rinse and drain.

Place the turkey, onion and garlic in a non-stickpan and cook over a moderate heat for 3-4 minutes, stirring. Add the drained split peas and cook for 1-2 minutes, stirring occasionally. Add the remaining ingredients and mix well. Season to taste. Bring to the boil, cover and simmer for 30-40 minutes.

Serve with freshly cooked pasta (I used wholewheat, less fat) and a crisp salad.
