| | | Carbquik pancakes or waffles Try this - you can use it for bread or buns, you can eat it like regular pancakes or make waffles instead . . . it's very versatile:
1 8oz Pkg cream cheese
3 eggs
1 pkg. Truvia
1/2 cup low carb baking mix (Carbquik, Atkins, whatever)
2 tbsp. buttermilk solids
1/2 tsp baking powder
water if needed to make pourable batter
Preheat electric skillet or waffle iron to 350°.
Beat cream cheese with mixer until blended smooth, add eggs one at a time, mixing until smooth; add the remaining ingredients, mixing until smooth. Spray skillet or waffle iron with butter-flavored nonstick spray and use 2 tbsp. batter for each pancake.
2 carbs per pancake.
(I've posted this before as the infamous waffle buns, but it's easier to make pancakes & I think they're a more reasonable facsimile for sandwich buns, etc.)

| | | Buttermilk solids? Not familiar with buttermilk solids. Where do you find this? Also the recipes on the box of carbquik are hit and miss. The pancakes made with butter were very good and the waffles made with oil were dry and not good. So I was glad to see your recipe. I think the cream cheese and additional sweetener should make a pretty luscious griddle cake. Do you think just usuing egg whites will make a difference?

| | What I use is Saco brand, and I've never had trouble finding it, even in our little local grocery which is very small and not a chain. I use it more for flavor than anything, because I had real buttermilk for years & I miss it in my cooking now that I no longer churn.
I use powdered egg whites for some things, but have never tried 'em in this, so if you discover a new thing, be sure to post!
The eggs I use are jumbo size, and they provide enough moistness that I don't even have to add water to get the right consistency.
(and yeah - I haven't been impressed with Carbquik's own recipes, but if you get on some of the low-carb forums, there are a few gems here & there.)

| | | I haven't used Atkins, but I think it would work just as well. The only place I've found Carbquik is online at Netrition.com, although their website says some Kroger stores were going to start carrying it. I called our nearest Kroger & they said nada . . .

Pumpkin and Carbquik pancakes
1/2 cup Libby canned pumpkin (has 9 carbs)
1/4 cup sour cream
1/4 cup melted Smart Balance spread
1/2 tsp vanilla
2 T egg whites (or more)
cinnamon to taste
fresh nutmeg to taste
a little less than 1/4 cup Equal from the easy pour canister
1 1/3 cup Carbquik
Mix first 8 ingredients. Add carbquik and mix until dense batter formed. Its more like muffin dough than a loose batter. Spray skillet with Pam and heat over medium. Add heaping tablespoons pancake batter and press down slightly in center of each with the back of the spoon. About 4 will fit into skillet well at each batch. Flip pancakes when they start to firm and bottoms start to brown. Serve with sugar free Log Cabin syrup. Makes about 12-14 pancakes. 3-4 cakes per serving although some easily enjoy more.
If topped with sugar free Cool Whip, this makes a scrumptious dessert.

made biscuits by the directions on the box. They were okay, will have to tweak the recipe. I didn't try their topping for the pot pie. I used the biscuits as the crust. Turkey pot pie with Carbquik veloute sauce
carbquik
Smart Balance spread
low sodium chicken broth turkey breast cut into small bite size pieces or leftover baked chicken, etc
veggies of your choice, I added the following:
frozen peas
fresh sweet potato, cut into cubes small bite size
fresh cauliflower, chopped small bite size tarragon (optional) or marjoram is traditional for pot pies
salt and pepper
Melt butter sub. in small sauce pan. Add an equal amount carbquik to make roux. Add chicken broth. Stir and cook about 5 minutes; it will thicken.
Add turkey and veggies to a glass baking dish. Season as desired. Pour veloute sauce over top and bake.
My sauce separated. Not sure why. Probably the smart balance spread doesn't cook the way butter does. I just stirred it, and all was well.
To serve, I added one biscuit per bowl.
Tasted fine.
