An elderly neighbour said she used to boil the squash not bake it. Anyone tried boiling it?

| | | It's a winter squash . . . dunno how it would take to boiling, although I guess I've heard of people cutting up pumpkin & boiling it. Seems like it would be really watery though, and it's plenty moist when baked.

She didnt mention watery so I'll ask her that. She did say she boiled it whole, not cut up.

Right about the planting too. For growing, it's planted the same as summer squash, but you don't pick 'em until they're fully matured - the skins have hardened and often develop a deeper color. Other winter squashes are acorn, butternut, hubbard, etc. These types have to be cooked and the "meat" then spooned out of their hard rind.
The summer squashes are planted the same time, but you start harvesting them as soon as they're big enough to eat, and they don't even need cooking - you can eat them raw & they don't need to be peeled either. Like zucchinis, crookneck & pattypan.

Seems he grew a bumper crop of it in KCMO in the 70's ... and knowing his family, they felt they HAD to eat it all ... ROFL. But at .99 per lb, it might be worth growing! And yes it comes out watery and not as nutty, when boiled or nuked (though several recommend nuking for convenience).
Also, it was GREAT as "dan dan squash!"
1.5 c spagh squash leftover
1T natural peanut butter (carbs)
1T rice vinegar or 2 tsp white vinegar
1T reduced-sodium soy sauce (carbs)
1tsp chinese chili sauce with garlic (carbs -- check by brand)
fresh cilantro
chopped scallions (carbs)
optional: chopped garlic (carbs), sesame oil
Okay,I TOTALLY fudged on proportions, just guesstimated on all except PB ... cause I have been making this for decades (I could live on it) and always go by guess! Made me hungry just to type this again.

While it was baking, I put butter, onions in a pan and cooked it over medium heat. I added mushrooms, green peppers, celery and a tiny amount of garlic and onion salt. When the squash was cooked, I took out the strings and added it to my frying pan and tossed. Added parmesean cheese and served. My husband and I loved it! The ideas are endless with this fun squash.

| | | Linda - I adore(d) Dan Dan noodles so that's a really appealing idea for the squash. I have one in the kitchen now, maybe tomorrow I'll try that. Although I do try not to have peanut butter in the house, since I can't seem to stop eating it when I do.

I dont have that amount of land to grow enough to have a bumper crop . I intend on planting only 5 seeds & will keep only 2 of the strongest plants.

I must say,though., i also had a little pork riblet and a salad/ I couldn't eat all of the riblet or salad after one serving of the spagetti squash. It is very filling!
