| | | Ooooh, spaghetti squash! Had mine with butter, salt, peper, and parmesan! After baking one hour. I think I had only had it steamed, before.
I ate TWO CUPS, and my Bg was like 126 an hour afterward. WAHOOOO! It was delicious!
DH is not as enthusiastic. Well that is okay -- I can bake one ever ytwo weeks and put the rest in the fridge!

| | | I have been using Spaghetti squash for a long time. I replace use it in place of most pasta noodles. I love it plain also. It is just nutty and good! Making Butternut squash soup tomorrow.

Spaghetti Squash Florentine
Book: Weight Watchers
Chapter: Side Dish
Serves: 4
1 spaghetti squash, cooked, 2 1/2 to 3 pound
2 teaspoons olive oil
2 teaspoons margarine
1 cup sliced red bell peppers
1 cup sliced onions
1 cup sliced celery
1 clove garlic, minced
4 cups spinach, thoroughly washed and torn into pieces
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon white peppers
1 tablespoon grated parmesan cheese
1 teaspoon grated parmesan cheese
Preheat oven to 350 degrees. Using the tines of a fork pierce squash in several places; place whole squash on baking sheet and bake for 1 hour.
Cut squash in half and remove and discard seeds. Scoop out pulp, reserving shells. Set shells and pulp aside.
In 10 inch skillet combine oil and margarine and heat until margarine is melted; add bell peppers, onions, celery, and garlic then saute until tender crisp, about 5 minutes. Add spinach and stir to combine; cook until spinach is wilted, and thoroughly cooked, about 3 minutes. Add reserved squash pulp and seasonings; stir to combine. Spoon mixture evenly in the 2 reserved shells, top each with 2 tsp Parmesan Cheese.

I actually baked mine after stabbing at 375 for 1.5 hr -- the skin was browning when I pulled it out, and it was baked-potato-soft.
During that hour and a half I made kids dinner and read a book ... so did not make anything elaborate anyhow.
I opted to just put butter, salt, pepper, dried hot pepper, and parmesan (not the canned stuff, the bag stuff  ) on it -- an old favorite way to eat my pasta.
Today -- leftovers with garlic sauteed in olive oil, and salt and red pepper! (ali oli -- another fave!).

I can't believe I haven't eaten it,yet,I pretty much will try anything and I love every other kind of squash and zuchinni and veggies. I definetly am going to the supermarket TODAY to buy one!
