Cheese making can be very complex and depend on things like temperature, humidity and mold. Some of the worlds best cheeses are aged in caves because they have just the right balance of temperature and humidity. If I were to start making cheese I would first learn to make fresh mozzarella or even fresh goat cheese. My local supermarket sells goats milk next to the cows milk. They are probably the simplest to make and since there is no aging required for the finished product you will probably have a better experience learing how to make it. Aging cheeses can be a very complex proceedure on its own. Often having to turn the cheese and "baste" the outside of it to produce a shell-like exterior. Yes, a fresh mozzarella or goat is the way to go, in my opinion. I applaud your energy to do this and want to know what you decided to make and how it comes out.
