Eggnog Cheesecake

ok, someone asked for my Eggnog Cheesecake recipe so here it is:

CRUST

1 cup graham cracker crumbs (diabetic sub would be 1 cup of almond flour)
3 tbsp melted butter
2 tbsp granulated sugar (diabetic sub would be 2 tbsp splenda)

FILLING

1 1/2 pounds of cream cheese
1 cup granulated sugar (diabetic sub would be 1 cup of splenda)
3 tbsp all purpose flour
3 eggs
2 tbsp of rum (use your favorite brand)
1/2 tsp nutmeg
1/2 cup whipping cream (not whipped)

DIRECTIONS

Crust: Combine crumbs (or almond flour), butter and sugar (or splenda). Press onto bottom of 9 inch springform pan. Bake in 325 degree over for approximately 10 minutes. Remove pan from oven and let cook on rack.

Filling: In food processor or with electric mixer blend together cream chesse, sugar (or splenda), flour, rum, nutmeg and whipping cream. Add eggs one at a time, beating well after each addition. Pour over crust.

BAKE

Bake in a 425 degree oven for 10 minutes then reduce heat to 250 degrees. Bake for 35 minutes longer or until center of cake is just barely firm to the touch. Remove from oven and immediately loosen cake from rim of pan. Let cool completely before removing sides.

WARNING: this is not a low calorie cheesecake

It's Christmas...heck we do have to cut loose once in a blue moon

Actually it is fairly low carb if you use the splenda and almond flour.

3 1/2 pounds? where are you reading that in the recipe? If you are referring to the 1 1/2 pounds of cream cheese that IS correct

You might try using the light cream cheese and substituting the heavy cream with light sour cream. I have done that in cheesecake recipies before. They taste just about the same, maybe just a little dryer but half the fat who cares!!! Might want to reduce the flour to 1tblspoon though cause of less liquid. With splenda and almond flour that would be lots lower fat and carbs.
