"glutamate decarboxylase" is the name of an enzyme that decarboxylates glutamate ... it does not have glutamate in it! Glutamine is a common amino acid present in many proteins and I would not advise going to a low-protein diet in order to avoid it ... and it is important in many body functions ...

Hi Linda,

thanks for clarifying, I was thinking something like "if you have too much of glutamate in the bloodstream, then you'll have to use a lot of the GAD molecules to process it, which then will create an imbalance, which will trigger some reactions in your body".

I've read that glutamate, in excess, may cause brain damage and nerve damage, at least as tested in mice.

They put glutamate in almost everything in quite an amount, since it's a cheap spice, they call the flavour "unami" I think.

A documentary on tv (and several other documents), convinced me, that glutamate as an additive to food is not a good idea. A german biochemist claimed in the show that exogenous, synthesized glutamate is very nocive for the human body and that the amounts that ingest through, f.e., tomatoes is negligible.

It made sense for me.
