Corn Muffins

Yikes. I have heard that cornmeal is a way delayed, extended absorption. Had a cornbread muffin with my chili last night at 630pm, bed at 930pm was 214. Checked myself at 3am when I check my daughter, (at 9hours later) I was 311!! No other changes, nothing out of the ordinary except that corn muffin! So ya think it really is a corn meal thing?

I've had some bizarre bloodsugars with cornbread too. It stinks because I LOVE the stuff.

corn muffin

I have had "cornbread" without any problems, but then had a "corn muffin" and it raised my levels somewhat. I think that corn muffins have sugar added whereas cornbread (or at least the cornbread we always have) has no sugar added.

I make cornbread and cornmuffins using exactly the same recipe. Maybe I should try the no sugar added version. I love it sweet, though....

I have a really hard time with corn and corn products too. For some reason I can handle chips ok...maybe it's all the fat I am eating with them...sour cream, cheese, gaucamole...yum!

I think corn in general is not good for diabetics...and cornbread generally has lots of sugar added...

Different for everyone, but you can see a slight difference between your BGs 2-3 hours later with the same bolus on the same amt of carbs of Rice Crispies and Corn Flakes.

With Corn Flakes you will be slightly higher. I've been told it's something natural that occurs with corn. I usually can get away with just bolusing a bit more--no need for an extended bolus.

As for cornbread--you'll find lots of added sugar--I always tend to bolus more than I need for cornbread. After the first bite you can usually tell if you're going to need more insulin (it tastes really good!).

I find muffin's in general hard to bolus for. They have way more sugar/complex carbs / and fat than they look like. I just make sure to test 1-2 and 4 hours after eating one, and correcting if I need to.

If you make the muffins yourself, use Splenda in place of at least 1/2 the sugar and figure out the carbs per muffin yourself from the ingredients. I do it all of the time, with any type of muffin.

I can eat corn just fine, but not corn bread/muffins. I've tried both sweet and not sweet versions and they both send my BG sky high. No delay about it, either! Last time I made chili I was dying for cornbread but didn't even bother. I think if I do try again I'll have to triple my bolus.
