Question Advice on breakfast

Wasn't too sure where to put this coz it could fit into a few of the threads relating to food really.

At the moment I avoid breakfast, mainly because I dont get all that hungry, but also because taking even the smallest of shots of novorapid in the morning makes me go hypo even if I eat a decent snack.

I can't stand toast in the morning or cerial. I certainly don't have time to cook anthing either.
Although i dont get hungry first thing, i do feel like i wish id eaten something by around 11am. So I've been eating Raspberries at breakfast. Theyre great coz they dont effect my bg, they're also fantastic for keeping depression at bay!

But I'm really trying to find something else to go with them or have instead, something that wont raise my blood sugar by much so I dont have to take a morning shot. I thought about a small fruit salad, but the fruits i can have are expensive (im a student ).

The best things that don't affect my bg are - eggs, coconut, raspberries and strawberries. But they don't go together all that well!
I've looked through some lists of low carb foods but nothing seems suitable as breakfast food.

Anyone got any sugestions? I dont fancy eggs with raspberries on top

Here is a recipe for a low carb cream cheese pancake:

2 ounces cream cheese
2 eggs
dash of vanilla essence
splenda or other sweetener

Soften the cream cheese and add the eggs one at a time beating well, add essence and sweetener. Put a knob of butter into a frying pan (think you call it a skillet?) and fry the batter - should make three good size pancakes and they don't stick to the pan. Serve with some carb free syrup or whatever your choice of topping.

These also make excellent roll-ups if you take out the essence and sweetener and add a little salt. Can be filled with all sorts of savoury fillings like spicy ground beef etc.

Total carbs will depend on the cream cheese used but should be no more than 2g carbs for the lot.

You can top these with any berries. I like blackberries and rasberries mixed, simered down to a sauce topping. Best to put frozen berries in a bowl mixed with favorite sweetner overnight. I add some Devinci Sugar Free Vanilla Syrup before I cook them the next morning. If rushed I cook in the microwave. The blackberries release a lot of juice, where as the rasberries do not. When I have more time I simmer them for awhile until the mixture thickens some.

Hi Laura,

Here is a quick and easy breakfast or snack. Prepare a frozen whole wheat waffle according to package directions. Top it with peanut butter and some of your raspberries or blueberries. Fold it and eat it like a taco. The total is around 35 carbs. I found that one worked well for a snack, but I require two for breakfast.

Great suggestions! Thanks

"Put a knob of butter into a frying pan (think you call it a skillet?)"
Nope I call it a frying pan too :p

I really like the sound of your idea Mark I will deifinitely try it.

Travis yours sounds good too but I'm not a fan of peanut butter, might try making it for my boyfriend sometime though, he'd love it

Peanut butter and Low sugar jelly sandwich for me every morning.

Carb count depends on the type of bread you use. I prefer the industrial weight/strength bread (18-25 carbs per slice) so I generally inject to cover 45-60 carbs.

Leftover supper?

Sometimes I make extra at lunch or supper and eat it breakfast, reheated in the microwave- would this work for you? I follow a regimen that suggests eating most calories and carbs in the early part of the day and easing down by supper... prepare for that by making enough that breakfast is the biggest serving.

Oh and eggs with chopped red peppers will keep bg at bay, too...

I was thinking of yogurt (they have low carb ones) or cottage cheese?

I have a Muller-light yoghurt for breakfast (they are quite big) and also one for supper when I take my last tablet........and if thats all I have, (and eat reasonably for the rest of the day), my numbers are pretty good.

I'm with Linda and Heather on this one. Yogurt all the way!

I, like you, cannot stand eating breakfast in the morning, Laura. I have to practically force-feed myself. Pancakes are better for dinner lol, unless it's breakfast in bed , and waffles involve too much chewing! :p

I've found that yogurt is the easiest and lightest to eat, and it keeps my BG's nice and stable throughout the morning. I don't have to cook it or chew it (much lol) which is always a bonus (the smell of cooking food in the morning is definitely a turn-off for me). In a pinch, you can buy plain vanilla yogurt and throw some fresh fruit - like your raspberries - in it. Personally I eat the regular carb, no sweetener stuff and it tops about 20 g CHO, but if you're looking for less CHO then do as Heather suggested and check brands.

Good luck!
Shy

Mark, that was yummy! Thank you! I changed it a liitle, used "garden style" low fat low clorie cream cheese and then scrambled the whole thing (instead of making it a pancake) and put it in a whole wheat tortilla with a dash of jalpeno sauce. The possibilities for this are endless...think chopped tomatoes, green peppers, chopped ham, green onions....omelette anyone?
Breakfast is my favorite meal of the day!

Good thread Lara Lu. I also am not a fan of preparing breakfast. Always seem to be on the go. Lately, I have been forcing myself to eat something. The good news is I have solved my problem with the Dawn Phenomena. Still, I think it's a good idea to eat something in the morning and it would probably be better to to spread the carbs/calories out a little more evenly throughout the day. I have problems with waffles (BS skyrockets afterward) but I think I will give the whole wheat types a try.

During the week I normally have a skinny wet latte from Starbucks - mmm. I find it filling because they ar emade with milk. At weekends it depends, sometimes porridge, cornflakes, or toast. You say you don't like toast, what about a bagel or a crumpet?

Well I tried the recipe that mark suggested; the pancakes. My pancake making abilities are pretty atrocious to say the least!! I started at 9 am (was a Sunday) and was still trying with about my 20th attempt at 2 o’clock in the afternoon! I don’t know why I’m so bad but I just can’t make pancakes! Every time I tried to flip it over and cook the other side I ended up with scrambled egg… which I hate . I eventually gave up on the recipe and tried making some ordinary plain old pancakes, that didn't work coz I ain’t no good at them either lol. It’s a shame coz I love pancakes… just useless at making em’

Today I had boiled eggs for breakfast… I couldn’t really mess that one up

Yogurt!?!?

BLECH!!!!

Yogurt is a culture, and cultures belong in science labs!

Me? I pefer ye olde POP TARTS or Cream of Wheat.

However, truth be known, I would rather have 4 pieces of fried bacon, 4 fried eggs, 2 pieces of buttered toast, a glass of milk to wash it down, and a pat on the butt on my way out the door.

But alas, I cannot have that and expect any quality of life in the near future...
