Except for age our stories are nearly identical.
I had been 185 pounds for many years. I'm 6'2 so this is a pretty lean BMI. You don't mention your weight but at 185 you certainly can't be overweight. You don't fit the profile for type 2.
At age 40 I started losing weight - eventually settling in the 170-175 range which I cannot increase regardless what I eat or how much I exercise (to add muscle).
I saw several endocrinologists who agreed that I don't fit the type 2 profile but blood tests ruled out type 1 so I was labeled type 2.
I tried the usual type 2 drugs that treat insulin resistance and none worked. My fasting bg (morning) was always fine 90-105 but my after meal bg spiked 130-180 with occasional excursions over 200.
Eventually I found an endo who actually knew his stuff and he said I'm a perfect fit for Mody. This isn't type 2 and it isn't type 1.

Here are your symptoms that make me think mody:
- too old for
typical type 1. Plus I'm assuming your endo ruled out type 1 with blood tests.
- too lean and too young for
typical type 2
- weight loss
- low fasting bg
- post-meal spikes
In my case I also have a long family history of diabetes - 4 generations - which is a classic marker for Mody.
You might want to do some research into Mody. It is possible to get genetic testing to confirm the diagnosis but a
good endo will be able to spot it immediately. Good luck finding a good endo who knows about Mody - they are few and far between.
