Day One of My Journey!

Well, I want to thank all of you for all the encouragement and nuggets of advice you've given me! It means more than words can express. Today I determined it in my heart to make several small changes in my life concerning my health. Day one started by exchanging white bread for wheat bread, and seriously watching the number of carbs I eat. Today my goal was to eat 1/2 the amount of carbs I normally eat. So far it has gone pretty good. My blood sugar has dropped drastically to 180's...it makes me feel like **** but I know it is all for my good. I still am taking the same amount of insulin, but at least it is a change for the good! Day 1 was so tiring but it was worth it, i am going to journal everything that i do and say while i am on my road to recovery!((((Hugs))))) i am in tears because of the love that is shown thru here... This is a blessed sight and forum.. for people like me!!! It amazes me of how much i have learned in the little time that i have been here.. and i am looking forward to sooo much more..

Congratulations on your first day! As far as the wheat bread goes ... some seem to still have problems with wheat. Try to buy a brand that really has the lowest carbs possible ... but like I said before, baby steps!!! You are definitely on the right track!

Thank you guysss so much for your support, its like.. a wow experience for me i am soooo determined to get on the right track.. i am excited.. i will be back pouring out my heart abt day 2 and plus i go see my doc tommorow.. I am excited!!!! Pray for me and cont to help me as i seek to help others as well!

Also........I do much better eating "light" wheat bread than I do with regular wheat. Give it a try!

Well done, making one small change at a time is a great way to get started, the really important thing is that you have started. Now that you have started it will get easier. Keep up the good work. One word of advice, check the carbs on the wholemeal bread, I have found that it can vary greatly from one brand to another.

I second this!!!! Congrats, and careful with Wheat! Try "whole grain" rather than wheat. Wheat is bitter and manufacturers tend to cover that with sugar.

Milton's whole grain bread seems to be better on the carbs than most.

I looked up Milton's (here) It says: ingredients: whole wheat flour, water, vital wheat gluten, brown sugar, degermed yellow corn grits, oat groats, yeast, wheat bran, rolled oats. contains 2% or less of the following ingredients: flaxseed, honey, bleached oat fiber, calcium sulfate, salt, buttermilk, cracked wheat, distilled vinegar, malted barley flour, ascorbic acid, enzymes, ferrous sulfate, wheat starch, cultured wheat flour, soy flour.

The "Whole Grains" are, primarily wheat grains! (The first ingredient listed)

I'm not saying that this is not a good recommendation, but brown sugar (4th ingredient by weight, 3rd if you ignore water) and honey are nutritionally basically equal to sugar especially once cooked.

This business of understanding labels and nutrition can be tricky. This product has 32 grams of carbs in 2 slices. Minus 10 grams of fiber still 22 carbs 6 of which are sugar.

Oh, and let's not get too excited about omega-3's in the flax - cooking destroys the omega-3's too.

I'm not trying to rain on the parade here - just callin' 'em as I see 'em. I'm actually holding back on the really bad news. Ask if interested.

Well Kim, I hope to have a good answer for the question "What about bread?" someday. There may be a decent commercial product out there, I have seen them discussed here on DF before but I don't recall specific brands.

I make my own breads. I'm not good at it yet but getting better. I'll post a recipe when I think I have something edible.

When a commercial bread nutrition label starts out with "whole wheat flour" you read that and think: "Oh goodie, whole (grain) wheat is better than plain wheat flour!". Well, brace yourself. If a manufacturer takes 1000 grains of wheat, strips off the bran and germ (to make refined wheat flour, which makes breads that people actually like) then pulverizes the heck out of it (increasing the surface area - and the glycemic index) they can't call that "whole wheat flour". But, if they grind up just one grain of whole wheat and toss it in - BINGO, now you can legally call it "whole wheat flour"! It's like magic. You can have your cake - and eat it too. Then wonder why your blood sugar is so high. Tacky details.

My healthy alternative? Mostly I just don't eat bread. I'll have a low carb wrap sometimes. If I'm cornered I might go with Rye or Pumpernickel, they're supposed to be better but I don't trust breads in general. Unless I make them myself.

Look for "100% whole wheat flour" which m-i-g-h-t really be 100% whole wheat. "whole wheat flour" is probably 1% whole and 99% not-so-whole wheat.

Lucky for me, I like salad, even when I skip the croutons.
