Nutritious snacks

I was thinking that everyone could give ideas for low carb snack food. I am sure this has been done before but since I am new to the forum, I did not see it.
I'll start. Ham/pickle rolls....
You take a slice of ham (a little thick), spread cream cheese on it, put in a pickle (garlic or dill) roll up, chill, slice and eat.
They are very good. I've been making these for years for partys. Anyone else have any ideas?

I do the lunch meat rollups for lunch a lot...i'll roll lunch meat of choice in a low-carb tortilla, add cheese, salsa, lettuce, sour cream...its quite tasty and filling.

May favorite "no-fuss" snacks are nuts, cheese, pork rinds, s/f jello pudding, s/f jello, low-carb ice cream from Breyers.

Wink

one low carb idea is cucumber salad. its really good.
All you do is slice up a whole cucumber(skin on or off) mix it with sour cream, cherry tomatoes dill and minced green onion. You can add any other seasoning to your taste. Enjoy.

Cheese, glorious cheese! I love the Kerrygold Swiss. Yum, yum. Also, peanuts, almonds, cashews. I also do cheese/deli meat roll-ups.

Two peanut butter w/cheese crackers.

Edy's (Dreyers (sp?) on the West Coast) has s/f frozen fruit bars that are very tasty.

Breyer's carb smart ice cream or the treats.

S/f Jell-O or pudding.

I found sugar free sweet pickels, yummmm! Also last night I made a bunch of chicken skewers and for lunch I had a Thai lettuce wrap... Some of the chicken, a little peanut sauce, cucumber spears, mint leaves, and bean sprouts. forgot to add, rolled up in a lettuce leaf!
