Amount per serving: Calories 20, Calories from Fat 5, Total Fat 0.5g, Saturated Fat 0g, Cholesterol 0mg, Sodium 15mg, Total Carbohydrate 3g, Dietary Fiber 2g, Sugars 0g, Protein 1g. 1 Effective Net Carb.
Looks like a good option for those of us who like pasta every so often.

Reminds me of the time many years ago when I was married. My wife had never learned to cook before we got married, so whatever she tried to make was a learning experience....with me as the guinea pig. (Heck, it took me two weeks to convince her that the smoke detector wasn't a food timer.  )
I came home from a hot, hard day doing construction work, and she placed a bowl of something in front of me and asked me to try it. She said it was beef stew with a substitute for beef.(she was trying to save money). I took one bite and pushed the bowl away from me. I asked her, "Is there peanut butter in that?" She said yes, it was a new recipe that was very nutritious, and used peanut butter in place of beef. Having potatoes and peas and carrots in a stew that had peanut butter broth wasn't my cup of tea. I didn't eat it.

| | To me, Tofu tastes quite good, and often takes on the flavor of what it's cooked with. I once had some stir-fry with tofu, and it took on an egg-like flavor. It was excellent! Quote:

Ew on the peanut butter stew! That doesn't sound appetizing to me, either!

| | I love these. These are made from Konjac root. You will see them called yam noodles in oriental grocery stores. The japanese version is of course shirataki. There appear to be some versions made with a mix of tofu and konjac. The ones made only from konjac are "NO" carbs. Let me repeat that. "NO" carbs! Oh and they claim no calories as well, which may very well be true.
I agree with the rinsing. Cooked they have an appearance somewhat like rice noodles and a consistency like a cross between a rice noodle and pasta, just a little jelly like. A perfect substitute for pasta. They come in a variety of sizing, spaghetti , angel hair, wider noodles. They also have flavored versions with things like seaweed.
Another thing to have on hand is konjac powder, nearly all fiber, it can thicken anything.
I get mine from local oriental grocery, but you can also buy on-line at Konjac Foods.
