Really?Not even a spinach omlet or mexican omlet? That's too bad. We do need nutrients all day long, why not get a greater variety of them starting at breakfast?

Today, I forgot to eat and forgot my morning meds. When I remembered, I had half a banana and some milk. I had already been working, and have no troubles with high morning BGs, so I could stand the fast acting carbs of the banana & milk.

Oh yeah, another favorite breakfast food with vegetables would be a crustless "quiche" complete with the cream and cheese. I like it cold or re-warmed, as I would have to have prepared it the day before.

For a while I made eggy flax seed pancakes. No syrup though. Just butter. Somehow I've gotten away from that habit.

I love veges for breakfast
I cook extra veges during the week saving some to mix them & make bubble n squeak for breakfast. Really nice with tomato sauce or ketchup

In my campaign for veggie-inclusive breakfasts, I want to share that today's at my house featured green beans dry-fried, then seasoned with soy sauce, vinegar, ginger, and garlic. I also had a handful of fresh grape tomatoes, a nice, fresh wake-me up.

Having never consulted a nutritionist, I am probably going about this absolutely wrong but I usually eat one piece of whole wheat dry toast (or half of a whole wheat bagel) after I take my medication at 6:00am. Then I have a cup of dry cereal, usually rice krispies, at around 10:00.
