| | | Diabetes and Resistant Starch This something new to me. My MIL gave me a recipe for low carb quick bread and the it needs resistant starch as an ingredient. Never heard of it until today. I wondered how it effected diabetes so I Googled it and this is what I found. I included a link below for an article I read about it and maybe others can help educate me on this too. In beans the "resistant" non-fiber "starch" is actually a large complex sugar called oligosaccharide, which is too large for your body to digest, unlike fiber however the bacteria in your gut however do break it down producing gas  unless you take Beano, which allows your body to break down and digest it as a SUGAR.

I was just pointing out (probably unsuccessfully) that what they called "resistant starch" in the article most likely is something other than the resistant starches used for low carb products ... since I can't believe a line of breads that act like beans when digested would be all that popular if you get my drift

The glycemic index from what I understand is an index of the speed at which certain carb source is digested ... not a index of how many carbs i. If you are going to eat a carb the stuff in the green zone won't hit you as fast and hard but they are still carbs.

Nice find BTW .. I may pick some up and see how it works as a corn starch replacement and/or a way to make low carb tortillas at home.

| | | The dietician at the diabetes ed. class figured 188 carb grams per day for the 1500 calories she said I needed to lose weight. I don't NEED that many and want to go as low as safely possible. For now I'm at or around 75-100 carb grams a day.

I'm not sure if they sell it here, but I'll check Whole Foods tomorrow. | Around here for a type 2 a carb intake of 75 is about as high as I've seen anyone talk about .. 100? wow. I went to 40 a day and sucked my BG levels down so fast it made my docs head spin I've just gone up to a max of 60 a day as the metformin has kicked in.
As a side note you won't find a lot of people around here that think MOST (hello duck) dieticians and nutritionists are clueless at best as to whats REALLY good for diabetics.
The hi-maize link store only charges 4.49 flat for shipping and they have lots more low carb baking stuff.
Heres a link to a resistant wheat starch with low carb numbers Resistant Wheat Starch 75
however they don't say that its GI friendly like the hi-maize.

And the dietician thing? I have to agree with you. The dietician I talked with is not a diabetic and stated she was complying with the ADA's regulations on balanced dieting. |

Also bear in mind that as you look around these places you won't find many low fat references.
Yesterday I had for my meals
.. a 2 fried eggs and sausage patty for breakfast 2g carbs
.. tuna salad in half a ww pita with some radishes on the side 14g carbs
.. cottage cheese and Dole romaine salad mix salad with turkey and parm vinegarette 9g carbs
.. salisbury steak with mushroom gravy and green beans 16g carbs
Grand total of 41g carbs

I'm not type 2 but I do have very many reservations about extremely low carb diets and use the GI index a lot in my own carbohydrate choices.
A passsing thought about the beans, there is a description in diabetes stories of a man that became type 2 in the '70s. He was put on an experimental diet in which beans played a major part. For many years until his wife died he kept with the diet. Fo, r many years he was a glider pilot.
