If you have the same breakfast then you would guess you would have the same number each day. I bet that is not the case. The wrap may have been the item putting you over the top of glycemic loading. You could try it again , skip the musnrooms or cheese or maybe cut in half

Test as much as you need to, in order to feel comfortable. You only find out how your body reacts to food when you test. As for the reason your sugar level spiked, do you know of the glycemic index? Some foods have a high GI and others don't. Try picking foods with a low GI which means the energy released (the carbs) is done slowly, therefore resulting in you feeling fuller for longer, not having a spike in your blood sugar levels and not feeling **** when they drop again afterwards.
