maybe i'm in a good place ATM and i won't knock it but i'm feeling really positive and open minded about this D thang we have - am dying to try a bunch of recipes i found here:

went to the health food store today and bought ingredients for a number of things to try - gonna keep a watch on my numbers and my weight and if they don't like these new recipes then i may have to go in a grain free direction - we'll see.....

 

oh! i also was able to get the full fat fage greek yogurt there as well as the local stores do not carry it and since the torani SF syrup is giving me stomach pains, i'm gonna try either liquid stevia and vanilla extract or liquid splenda and vanilla extract to soak my berries in before i add them to the yogurt

 

having the D isn't the end of the world.....at least today it isn't (for me, anyways)

OMG! Those recipes look wonderful! Let us know how you do with them. I'm experimenting with low carb baking, too.

the lindt bars are all i can get locally and they raise me 10 points per two squares - thought i'd try some other brands and compare taste and BG results - i'll test in an hour and see what the lily's did to me

Love to bake and love chocolate! Would love to know what you find and where did you find the Lily's with Stevia? Trader Joes or Whole Foods maybe?

 

Please post a good brownie or chocolate recipe.

 

I've been pretty unsuccessful in my chocolate attempts and will check out the websites you posted and see if there is anything I can try with what I have on hand! I've got coconut oil, almond milk, almond four, coconut flour and unsweetened cocoa.

pat - i got them at whole foods

 

i was 111 2 hrs before i ate the lily's - didn't test RIGHT before cause i hadn't eaten since i had tested earlier so i assume i was close to 100 maybe when i ate the chocolate - an hour after i was 97 - so it did great for me yesterday - not sure what it'll do the next time i eat it - seems like foods don't always give you the same effect

my brekkie today - turkey sausage with gouda:

 

 

and lunch - yum!!:

 

 

i used 1 cup of the soy slender, 1/2 cup of the silk, 1/2 scoop of the protein pwder and maybe about 1 TBsp of the peanut butter pwder - it was very yummy!!

and here's my youngest - bein so fly - hahahaha!! he loves me to take pics of him - this was last night:

okay - so here is today's attempt at pasta - we'll see how it tastes:

 

 

recipe used:

2.5 cups bob's red mill whole grain LC baking mix

2 tsp salt

1/2 tsp baking pwdr

1/2 tsp garlic pwder

1/2 tsp italian seasoning

6 TBsps butter - melted & cooled

4 eggs

 

makes a sticky dough - i kneaded it a lil in some more of the baking mix - divided it into three balls, rolled it out and now it has to dry for 30 mins before i cut it

 

gonna use a sugar free pasta sauce on it - i think it's ragu but not sure

hahaha! the recipe said to place dough on the towels while drying :P

 

pasta tasted pretty good - good enough for me anyways - tasted kinda like spelt pasta - only a teensy hint of a rubbery texture

 

after i finish that lily's choc bar for dessert tonight and deducting the fiber grams from today's food, i will have had 32 grams of carbs for the day
