Low Carb Chocolate Chip Cookie Recipe | All Day I Dream About Food

This is from Carolyn at All Day I Dream About Food and she uses coconut and molasses (optional) in it. I don't like coconut so I omitted it and had honey (1 tsp.) in place of the molasses as I had none of that. Will post a pic as they are done.

2 cookies = 3.8 net carbs

See...nice and thin!

These IMHO are better than Elan'a Amsterdam's as her's are cakey and these are more cookie-like. I could have gone another minute I think to get them a bit browner on top, but as you know there is a fine line between done and burnt so...I am keeping this recipe for sure!post-55074-139628787565_thumb.jpg

i'm making these now but omitted the coconut and instead banged up some pecans to use ~ also, i am only using half the amount of choc it calls for and i am using splenda as the sweetener

 

have you tried mcs' pecan chco chip cookies? am wondering how these compare....i'll know soon enough

well apparently my cookies are too big ~ i got 16 cookies, each roughly 2.5" diameters

 

so 2 of my cookies = 4 of hers

 

pfft! grrr! lol ~ too late now cause i already ate two of em. d'oh!

ten more mins and i can test my bg and see what my body thought of em, lol

sounds good! I omitted the coconut, too. I actually like the taste for the Swerve erythritol, so I am happy with it. Did you get your samples yet?

I see that link didn't work , so here it is again. Maybe this will work.

 

So I don't use coconut, so you can change this if you want. Also if you look up Elana Amsterdam's chocolate chip cookies, they are also with the fine blanched almond flour (not meal) and are great as well! Elena's recipe is al so on the back of the Honeyville Grains Blanched Almond Flour bag (5 lbs.)

Another recipe to add to my book. I'm not a big fan of chocolate chip cookies but maybe I can tweak it to make another kind of

cookie.

 

I was eating the last of my almond pound cake the other day and wondered about making a butter rum cake out of it with cream

cheese rum flavored icing. I know I can grind Splenda in my spice blender to make icing sugar for the icing and the rum flavoring

is only butter rum extract, sweetener and is heated. Add a bit of water it it's too thick. You poke holes in the cake and pour the

hot mixture over it, let cool and ice it. I used to make this all the time pre diabetes and it was something I liked. I think I'll try it

one of these days. I'll let you know how it turns out

 

That sounds really good, also. I'm going to try the cookies, but truthfully, I'm very nervous. I'm not a baker but moreover, I'm afraid I'll eat too many. I have absolutely 0 will power. I could not dole out small amounts of pork rinds. I love them. Way too many calories, though. If I eat them, can't eat food. I'm afraid to wake the sleeping giant...carb monster.

I always eat 2 at a time...no bg raise, but I limit myself to 2 cookies twice a day. Usually at lunch and at dinner.

I made this last night and spread Polaner All Fruit and Fiber jam on it and while the jam adds 6 carbs, it has fiber in it and I get no real raise in bg's hardly at all.
