"Fudgy" Flourless Brownies

Hey All. I just made a batch of these and had  a piece and it didn't effect my numbers so I thought I'd share. I used Honey instead of Maple Syrup (of course).

Ingredients
 
1/2 cup minus 1 Tbs. coconut flour (use the "dip and sweep method" to measure or use a kitchen scale and measure 50 grams of the flour) I use this coconut flour
1/2 cup cocoa powder - substitute carob powder (this stuff) if there is a chocolate sensitivity
1/2 cup plus 2 Tbs. butter, melted
3 eggs, at room temperature (egg substitutes will not work)
1/2 cup plus 2 Tbs. honey or maple syrup
1 tsp. vanilla extract, optional
Instructions
 
Preheat the oven to 300 and grease a glass baking dish (8x8 or 9x9).
Mix together all ingredients. You can do this by hand or with an electric mixer or high-powered blender.
Pour into the baking dish and bake for 30-35 minutes, until a toothpick inserted into the center comes out clean. Cool for 30 minutes before cutting or removing from the pan.
These store well at room temperature or in the fridge for a few days. Make sure you keep them in an a irtight container.

From a diabetic standpoint, there isn't much difference between honey and maple syrup as they are both sugars.

Thanks for the recipe, I would sub some liquid sucralose for the sweetner, but if your numbers were ok, that is great.

Could you substitute SF Da Vinci liquid sweetener for honey? Sound good when I feel better!

From a diabetic standpoint, there isn't much difference between honey and maple syrup as they are both sugars.

Oh, and I would skip the vanilla..I've read that it shouldn't be optional. Oh and you can substitute the butter for Ghee or Coconut Oil but it'll have a difference consitency

they look yummy ~ glad you got good numbers even using the honey

 

bet it'd be even better topped with homemade vanilla ice cream

"funny" you should mention it my Mother makes a cake that is called Hot Fudge Cake (totally worth the carbs), that's truly Death by Chocolate. You layer the cake (but she usually makes brownies instead (box) put vanillia ice cream in between & pours homemade chocolate sauce over top.

Oooh..I put some in the freezer last night to keep and I just tried one just now and they don't completely freeze. It's cold, but it's a nice cold treat!
