High fiber morning "cinnamon toast"

This has become our favorite morning "toast"


Cinnamon toast quick bread


2/3 cup Carbquik

1/4 cup almond meal or ground pecans (lower carb than almonds)

1/4 cup flax meal

1 tbsp cinnamon

2 tbsp chia seed

1/4 cup chopped nuts (I use pecans or walnuts)

2 tbsp Wheat Protein Isolate 5000 (or 2 additional Tbsp carbquik if you don't have WPI.

1/2 tsp baking soda

1/2 tsp baking powder

2 eggs

3 tbsp  water

1 tbsp cream

1/4 cup Torani or DaVinci caramel syrup

1/4 cup sour cream

3 tbsp oil

1 tsp vanilla

Artifician sweetener of your choice equal to 1/2 cup of sugar (I use liquid sucralose)


Mix all together and spoon 1/4 of the mix into a small microwave safe dish that has been sprayed with cooking spray.  I use the little 4" square corningware mini-casserole dishes, because it makes square "toast".  Cook each dish 2 minutes in the microwave on high and turn out on to a rack immediately.  You can use the same dish for all 4 muffins.  When they have cooled, slice them in half horizontally and store in a ziplock bag in the refrigerator so they don't grow green fuzz....no preservatives in there! I get 8 pieces of "toast" from this recipe.  Toast them, add some butter and you are in heaven.  Also great with peanut butter.
