Mushroom chicken with mashed cauliflower

This is my own recipe that I made last night for dinner. It turned out so good I thought I'd share it.


Mushroom chicken with mashed cauliflower


3  stalks celery diced

1 small onion diced

1/3 diced green pepper

1 package white mushrooms

1 1/2 cups chicken broth

1 cup cooked chicken cut in bite sized pieces

1/4 to 1/2 tsp.Xanthum gum

pepper and poultry seasoning to taste

1 cauliflower steamed and mashed with butter and a little cream with a dash of pepper.


I cut the cauliflower in pieces, washed it and set it in the steamer basket to steam.

I diced the celery and put it in a frying pan with a little olive oil to saute. Then diced the onion and added it. Then diced the green pepper and added it. I wiped off the mushrooms and sliced them and added them after the vegetables had softened a bit.


When the cauliflower was very soft I turned off the steamer and lifted the basket out so the cauliflower would dry a bit. You don't want to have it wet or you'll have soupy mashed cauliflower


After the veggies had softened and the mushrooms cooked I added the chicken and  broth and spices and cooked it a bit to warm the chicken and release the flavor of the spices. Then I tasted to see if it needed salt or more spices Then sprinkled on the Xanthum gum. I started with 1/2 tsp but I didn't use it all. I sprinkled it on then let it cook a bit and added more as needed to make a gravy


I mashed the cauliflower and served the chicken mixture over a bed of cauliflower. It was delicious and made enough that I can have a few meals from it.


You could add more chicken or broth or anything really as long as you have a good ratio of chicken and veggies to broth
