Beat the summer heat

So, being as its so hot today, I haven't been very active except to take a cold shower about once an hour.  So I've been sitting here browsing the web and looking at recipes.

 

I thought it might to nice to start a thread for great summer recipes.  Things that don't require cooking or only minimal cooking, dishes for cook outs, picnics, and any other summer activities.

Yum, what a great idea! That broccoli stem salad looks great. It's not too hot where I live yet, but it would be good to plan ahead.

I tend to just eat lettuce salads a lot. My favorite summer meal is to throw frozen stuff and ice in the blender. It sometimes turns out odd, but at least it's cold. Frozen veggies, cocoa, coconut cream, flax seeds, protein powder, avocado, a few nuts, etc.

Some good ones there Kit!  Never thought of grilling an avocado!

 

Pre D I used to make gaspacho all the time.  I think you are right Mike, the tomato might be a problem.  The one I made used tomato or v-8 juice and I know that is out :(

I like cold salads such as chicken, salmon or egg. I must confess that I make all three the same way... with finely chopped celery, green onions, mayo, mustard, dill relish and a heaping teaspoon of prepared horseradish. Salt and pepper where needed. I serve it over a bed of lettuce and sliced Napa cabbage or kale with a side of pickles and Manzanilla olives. Works for me.

Quoting trump I have an 'uge arsenal of keto BBQ sides because I love to grill and smoke meat.  Some of my favorites are:

 

 

I substitute artificial sweetener for sugar and use "real" mayo which should have 0 carbs:

I substitute artificial sweetener for sugar and black soy beans (Edens) for the kidney beans (I use red wine vinegar as balsamic has quite a few carbs):

I use full fat sour cream (1g carb/per serving) yellow mustard and omit the celery and bacon (make sure you drain cauliflower well), I also mash a few additional cooked egg yolks in the sauce to add some "starchy-like" texture:

I use SF strawberry Jello and dollop SF strawberry preserves instead of using whole strawberries, but add them if you can tolerate them:

Thanks--Bean salad has always been a favorite for hot days. It goes great with burgers off the grill or cold chicken. I have been making it without the kidney beans but it's not the same. I'm going to give black soy beans a try. I use whole onion rings in mine--usually a red onion. That way any one who doesn't like onions can pick them out but you need them to give the salad flavor

 

Cucumber salad is another favorite. I make it with ranch dressing

 

We are luckier than some. Usually no matter how hot the day is it usually cools off at night. That's when I boil up a bunch of eggs. Deviled eggs go great with any meal or you can use them in a salad with cold meat and cheese for a chefs salad or just make egg salad and eat it without the bread. I buy a whole barbecued chicken at the grocery and refrigerate it. You can make a lot of things with cold chicken or just eat it sliced.

Deviled eggs is about it for me.  Hot weather kills my desire to eat so I tend to fast more during hot weather.  Iced green tea is my friend!

 

Even before I went keto/lchf, I couldn't eat much during the summer...nothing tastes good, not even fruit in the old days.

 

My predominantly very northern European ancestry does NOT like the heat!  I melt!

I tend to eat light when the heat and humidity are high. Mostly green salads with tuna or chicken. Not much into baking or frying or grilling. Quick and easy is the way I go. I will check out the zoodle recipes since I haven't used my zoodle maker for a while.

My predominantly very northern European ancestry does NOT like the heat!  I melt!

 

I am very similar.  When the heat comes, this Northern European blood decides that moving is more effort than its worth.

 

Its been a pain lately though.  It takes a couple of days of heat fr my appetite to drop.  Then the temps drop and my appetite goes back up.  And with our temps on a rollercoaster (90s yesterday, 60s by later in the week), my body hasn't the slightest clue what is going on.  :D

While this is very basic it does have the advantage of being simple to make and refreshing on a hot day.

 

Coleslaw.

 

Shred or process 1C cabbage

Add 1T mayonnaise

Add a "splash" of red wine vinegar (I suppose any vinegar would do though or maybe even lemon juice)

Add 1 packet of sweetener.

Salt and pepper to taste.

 

Mix well and enjoy.

 

Of course, this can be adjusted to personal preference.  I would probably like a little more mayo but I am still doing the portion control to lose the rest of my excess weight.  I find this a refreshing side and doesn't heat up the kitchen to make it.

Chili in the crock pot. Spicy foods are good to eat in the heat, & the crock pot doesn't warm up the kitchen too much..

I might have to disagree with that last bit.  When its hot, even the presence of Mr Fuzzy in the same room is more than I can tolerate.  :D

Hey Kit--the way you're describing the temp roller coaster, it sounds as if you could be in the Puget Sound area!  That's exactly what's happening here....we had 103 on our deck on Sunday, although I don't think the "official" temp got that high (our deck gets all day sun).

 

I'm ready for some cool cloudy weather again!

I am.  Work in the north end and live in the south end.  Wonderful Seattle commute twice a day.  I swear loudly every time there's a home game.  :D

 

Thankfully we should start dropping again tomorrow.  I am so looking forward to it.  I couldn't even manage to hit my minimum goal of steps/distance for yesterday.  Just no energy.
