I've been recipe browsing recipes this evening while I wait for the sun to go down enough to take my evening walk.

I know this is really no different than a lot of the low cark pancakes out there but this one actually looks good to me for some reason.  Maybe its the cream cheese frosting in one of the pictures.  :)

Mr Fuzzy invented this recipe many years ago.  Only his was pepperoni, cheese, and tomato paste.  He ate it on toasted wonder bread.

 

One of these days I may tell the enchachonga story.  Another Mr Fuzzy recipe created while I was out of town for a week due to work.

This one draws me.  I think mostly because it doesn't try to pile yet more cheese on top on everything.  A little sausage, a little mushroom, a little pizza sauce and you're in business.

Thanks. Usually I like to try recipes some one else has tried and liked. A couple of these do look really good. The french toast one reminds me of dutch puff pancakes I used to make for the family. I will print a few of these out. Thanks Kit for sharing! Happy cooking!! Do let us know which ones "worked" for you.

I tried the low carb skillet pizza this evening.  I need a little more practice determining how long to cook the cheese, but worked pretty well.

 

For toppings I did my usual passion of onions, mushrooms and peppers.  I also sprinkled a little parm cheese on top of the tomatoes before adding the other toppings.  A little sausage would have been nice too, but I don't have any right now.

The other night was leftover night, I had some cooked left over cabbage & some raw chorizo, so I fried some onion, added chopped cabbage, & then the raw chorizo, cook  & stir, till meat is cooked, & eat, it was like a chorizo hash, I will make it again. You could add other veg too, whatever is on hand. I had some tomatoes with it.

That's a pretty standard weeknight meal for me.  Well not that exact thing, but the cooking method.  Fatty meat, added fat and various vegetables depending on what I have around.

 

I don't believe I've every tried chorizo.  I need to do that some time.  It sounds good to me.

It can be a bit spicy & hot, that is why I like it mixed with veg, to tone it down a bit. It is also good with  eggs, I also like the price ;)
