rice test

It was a Korean lunch today, small amount of rice, thought I would give it a go.  Pork Katsu was probably Panco breadcrumbs, salad, soup, water.   3 hours later at home I was BG135  (morning 99).   just surprised me I guess.

There was an interesting Youtube where a non-diabetic couple were testing sugar alcohols.  They started with table sugar as a baseline.  Their glucose went to the 120's if I remember correctly, but within 2 hours was back to where they started in the 80's.  

 

My own observation when eating something with sugar is similar.  I go to 130 or so but it takes about 3 to 4 hours to get back to where I started.  The only exception to this is if I am on an epic bike ride then the exercise (I guess) burns off the glucose and I am back to where I started within 2 hours.
