Smoked Salmon Platter

Just read this in a magazine & I'll be making it for christmas.

I'l plant the radishes this week just for it.

 

2 Radishes thinly sliced into rounds

1/4 small red onion sliced very thinly

2Tbs dill sprigs plus extra for garnish

2Tbs white wine vinegar

250g tub spreadable cream cheese

1tsp wholegrain mustard

grated zest & juice of 1 orange 

sea salt flakes & fresh ground pepper

1/2 firm avocado finely sliced

300g smoked salmon

1cup watercress sprigs

1Tbs extra virgin olive oil

1/4 cup cornichons halved

( shhh optional flatbread to serve )

1. put radish,onion,dill, vinegar in a bowl & combine

2 Put cream cheese,mustard& zest in a bowl & beat to a cream then put in a small serving dish.

3 Toss avocado & in orange juice& set aside

4. Arrange salmon on a platter. Drain pickled radish mixture & arrange on salmon with avocado

5 Scatter watrer cresss sprigs & extra dill.

Drizzle with olive oil & serve with cornichons & flat bread if using .
