Asian Style Green Beans

Made an impromptu Asian style green beans dish last night that I served with some fried pork chops that ended up pretty good.  I brought leftovers into work with me (I actually remembered) and have more for tonight as well.  :)


1 pound fresh green beans (trim stem ends)

2 shallots sliced thin

2 cloves garlic sliced thin

1 Tbsp fresh grated ginger (I used one of the tubes myself)

1 Tbsp soy sauce

1/2 Tbsp sesame oil

Sriracha to taste (recipe macros use 1 Tbsp which is 3g of carbs for entire recipe)


oil to cook in (I used avocado oil)


Trim, wash, and dry your green beans.  You want them to be nice and dry.  Otherwise they don't stir fry so much as steam and we don't want to steam.  I recommend using younger green beans and not those big thick ones.  Smaller cook better and have better flavor.


In a large skillet or wok, heat oil to high

Add in green beans and stir fry until they are about half way done to your liking.  I like mine done well with some nice color/blackening on the outside.

When the beans are a getting close to done, add in garlic, ginger, shallots, and soy sauce, the optional sriracha, and continue to stir fry.  The shallots won't be cooked very much, but it works perfectly with this dish.  Garlic can be put in earlier, but I wanted to avoid burning it so may have been a little extra careful.

When done, turn off heat and add in sesame oil.  Toss for a few moments to mix in well.

Serve immediately.
